  • 250g Grated Halloumi
  • 200g Chopped Mushroom
  • 350g Chicken breast
  • 2 Eggs
  • 1/2 cup Chopped coriander
  • 1 cup Bread crumbs
  • 1pc Finely chopped Red onion
  • 2pc Finely chopped green chilli (optional)
  • 1 cup AP flour
  • 1 tbsp Lemon juice
  • 2 Tsp. Salt
  • 1 Tsp. Black pepper
  • 3/4 Tsp. Garam masala
  • 1 Tsp. Minced Garlic and ginger
  • 3 tbsps Vegetable oil
  • Wooden Skewers

FOR THE KEBAB:

Soak the skewers in water to soften them

Cut up the chicken breast finely Toast the chopped mushrooms in a pan for 5 mins

In a large bowl add: chicken, toasted mushrooms, grated halloumi, egg, coriander, lemon juice, onion, bread crumbs and all the spices and salt

Mix with a wooden spoon, drain excess liquid if any Coat your hands with oil Begin to mold the mixture on to the skewers or mold into a cylindrical shape. Repeat the process till finished

Place the skewer in the fridge to set for 10 minutes

Dust them with flour as you shallow fry with the vegetable oil until golden

Enjoy!

The recipe can be converted to vegetarian by excluding the chicken

It could also be a burger patty or meat balls

The kebab would go well with any mayonnaise base dip like honey mustard or sweet chilli mayo
