30 gms fresh basil
2 tbsps pine nuts
1 clove garlic, crushed
250gms feta cheese
4 tbsps olive oil
12 small cherry tomatoes, halved
Method of Preparation
- Tear the leaves from the basil stalks, keep the small springs for the decoration
- Put basil leaves with pine nuts and garlic in a food processor and whizz until you have a thick crumbly paste.
- Add feta cheese and olive oil and whizz until you have a thick spread.
- Dollop a spoonful of the feta spread onto each snack cracker and top each one with a cherry tomato half.
- Garnish with the reserved basil sprigs.
