IRIO also known as a Mukimo is a Kenyan traditional classic dish.
Sirimon Feta elevates the flavor profile and completes it as a balanced meal.

Ingredients
- 1kg Peeled Potatoes
- 200g Green Peas
- 2 bunches Spinach
- 1 tsp Salt
- 2 pcs Chopped Red Onions
- 3 cloves Minced Garlic
- 3 tbsp Vegetable oil of choice
- 1/2 tsp White pepper
- 200g Sirimon Feta cheese
- 2 tbsp Finely chopped Chives
- 3/4 cup Greek yogurt
Preparation:
Dice the potatoes into 1 inch cubes and put them in a pot of simmering water with 1 tsp of the salt until the potatoes are fork tender, then drain and marsh the potatoes
In separate pots blanch the spinach and peas and place them in different bowls
Crumble the feta cheese with your hand
Place the feta, garlic, greek yogurt, 1 tbsp oil and spinach in a blender and pulse until everything is in cooperated
Fry the chopped 0nions until they are golden brown
On low heat add the marsh potatoes and continuously stir with a wooden spoon while adding the mixture from the blender gradually as you stir
Add the whole peas and mix
Cover and let it steam for a minute or so and top with chives
SERVE HOT with broth of choice
