Ingredients
FILLING
- 100g Diced Ham
- 200g Grated mozzarella
- 1/4cup Chopped Basil
DOUGH
- 4 cups All-purpose flour
- 2 tbsps. Yeast
- 3/4 tsp. Cardamom powder
- 1 cup Warm water
- 3 tbsps. Sugar
- 1 pinch Salt
- 2 tbsps. Butter or margarine
- 1 cup Coconut milk
- 1 liter Vegetable oil (deep frying oil)
Mix the ham, mozzarella and basil in a bowl and set aside In a large bowl, mix the dry ingredients, flour, yeast, cardamom, sugar and salt.
Don’t place salt and yeast on the same side of the bowl because salt deactivates yeast
Add margarine to the dry ingredients and mix
Add coconut milk and water gradually as you mix
Knead the dough for approximately 10 mins. If the dough is ready it will bounce up when you lightly press on it
Divide the dough into 6 smaller balls
Cover with a clean cloth or cling film to prevent a coating from forming on the surface then rest the dough for 10 mins
Roll out the balls of dough to a diameter of approximately 15 cm
Cut the circle in half so as to have 2 semi circles
Place 2 tbsp. of filling in the center and then overlap the dough to have one corner over another and tap gently around the edge to conceal the filling repeat for the other balls of dough
Sit triangles on the counter and let them rest for a further 10 mins as the deep frying oil heats up
Deep fry the dough 3 at a time till golden brown
